    What is Biryani Masala?

It is a spice mix made specially for the biryani. This masala is completely different from regular garam masala. It contains extra spice powders, such as caraway (shahi jeera), mace (javitri), and black cardamom. These spices give your biryani a smoky, layered, balanced fragrance and better taste. This masala mix is ground using cryogenic technology and made the traditional way. It’s made using the same method Indian households have used to make biryani for ages.

    Sourcing and Origin

Every spice used in this mixture is sourced from its best-growing regions across India. Cumin and coriander are from the regions across Rajasthan and Gujarat. The dry weather in these regions produces seeds with high oil and fragrance. Black pepper comes from Kerala. Cardamom is sourced from Karnataka and Kerala. Bay leaves are from Northeast India. Each spice batch is evaluated for smell, colour, and purity before processing.

Why Cryogenic Grinding Matters for Biryani Masala

This Masala is a blend of several spices, including cardamom, cloves, mace, and caraway. These spices contain natural oils which give the masala its fragrance. Traditional grinding generates heat due to friction. This heat evaporates the natural oil. Hathi Masala ground spices using cryogenic technology. It cools each spice down to -150°C before grinding. This method locks in the natural oils. This is why a single pinch of this masala smells stronger than 2 pinches of regular masala.

    How to Use Biryani Masala

    - Veg Biryani: Add 1-1.5 tsp per 500g of rice. Mix the masala with the vegetable gravy before layering with rice.

    - Chicken Biryani: Use 1.5 tsp for 500g of chicken. Add the masala to the curd marinade along with ginger, garlic paste, and onion.

    - Mutton Biryani: Use 2 tsp for 500 grams of mutton. Mutton needs slightly more masala because it takes longer to cook.

    - Hyderabadi Biryani: Sprinkle a pinch of this masala on the top of the rice right before sealing the pot or cooker. The steam generated inside the pot enhances the aroma of masala.

    - Biryani Pulao: Add 0.5 teaspoon while sautéing onions. It gives a quick biryani taste in a simple pulao.

    - Korma and Rich Gravies: Use 0.5 teaspoon at the end of cooking. It adds the same warm biryani aroma to korma and mughlai dishes.

  • FAQ

Q1. What is Biryani Masala, and how is it different from regular masala?

It is a special masala mix created only for biryani and pulao. It contains 17 spices, such as caraway (shahi jeera), mace, and black cardamom. These spices aren’t present in your regular garam masala. These extra spices add a smoky, layered, and balanced aroma to your biryani dishes.

Q2. Can I use Hathi Biryani-masala for both vegetable and Hyderabadi biryani?

Yes. This masala pairs perfectly with veg biryani. It gives your paneer, mixed vegetable, or mushroom biryani a beautiful, rich aroma, just like non-veg biryani. Just add it while cooking the vegetables in gravy.

Q3. When should I add Biryani Masala while cooking?

Add this masala while marinating the meat, or during cooking the vegetable gravy, before layering with rice. Sprinkle a small pinch on the top layer of rice just before sealing the pot for dum. The aroma spreads evenly into your biriyani.

Q4. Why is cryogenic ground masala better?

The whole spices are cooled down to -180°C before grinding. That’s why there’s no heat produced during the grinding. The natural oils and aroma of each spice remain intact inside the powder. This is why Hathi Masala smells comparatively stronger, and you need to use less per dish.

Q5. Does Hathi Masala contain artificial color or preservatives?

No. This masala mix contains only natural spices. It doesn’t contain any artificial colors, dyes, or preservatives. The taste and aroma come fully from the natural whole spices. Every batch is lab-tested for purity and safety, and Hathi Masala is certified to FSSAI and ISO 22000 standards.

Q6. How should I store this masala to keep it as fresh as possible?

Transfer this masala to an airtight glass or steel container after opening. Keep the container in a cool, dry place away from moisture and direct sunlight. Always use a dry spoon. Best used within 8-12 months of opening.

Q7. Can I use Biryani-masala in dishes other than biryani?

Yes. You can add a small amount to many dishes, such as pulao, korma, Mughlai gravies, and even fried rice, to get a biryani-style taste. 0.5 teaspoon is enough for daily dishes. Use only 1 full tablespoon when cooking biryani.

Q8. Is Hathi Masala suitable for kids and older people?

Yes. The masala is light and not very spicy. For children, always add a small pinch and don’t add extra red chili powder. For people with sensitive stomachs, the cumin, coriander, and fennel used in this spice mix support digestion.
