It is a spice mix made specially for the biryani. This masala is completely different from regular garam masala. - Mutton Biryani: Use 2 tsp for 500 grams of mutton. Mutton needs slightly more masala because it takes longer to cook.
- Hyderabadi Biryani: Sprinkle a pinch of this masala on the top of the rice right before sealing the pot or cooker. The steam generated inside the pot enhances the aroma of masala.
- Biryani Pulao: Add 0.5 teaspoon while sautéing onions. It gives a quick biryani taste in a simple pulao.
